Vegan Enfrijolada

Continuing with my version of Mexican vegan recipes, this recipe is one of my favorites. I used to serve this dish so many times while working in that Mexican restaurant, and every time I did, what I saw was a customer so pleased after trying the “enfrijoladas”. They just loved them! That restaurant have 4 fillings to choose, and 2 of them accidentally vegan and very tasty on purpose, lol.

Enfrijoladas is basically a variant of “enchiladas” that use refried beans instead of enchilada sauce, same method, equals deliciousness for the refried beans lovers, as me. And this is he recipe:

Vegan Enfrijolada


8 Corn Tortillas

1  Pkg “no chicken” strips or seitan of your choice

1 Pkg sliced mushrooms

1 red bell pepper in slices

1/2 onion in “half moon” slices

1 Tbsp olive oil

1 Tbsp garlic powder

2 Tsp sea salt (or to taste)

1/4 Tsp Black pepper

A hint of poultry seasoning

1 Cup Mexican salsa of your choice

2 Cups Black refried beans (click for recipe)

1/2 Cup water (if needed)

1 Cup of vegan cheese of your choice

2 Tbsp nutritional yeast (optional)


  • Preheat the oven at 350 F.
  • In the mean time sautee the onions, “no chiken” or seitan, red bell peppers and mushrooms on olive oil for about 3 minutes.
  • Add the seasonings, stir and remove from the heat. The idea is having a stir fry that taste delicious but not so cooked, so it will finish cooking in the oven.
  • In a baking tray pour a cup of salsa and evenly spread it to coat all the surface.
  • Take a corn tortilla and fill it with your stir fry, roll it and place it with the sim face down. Repeat with the 8 tortillas.
  • If you’re using store bought refried beans, which comes in a can, you’ll need to thin the mixture using 1/2 cup of warm water, But if you are following this recipe you can adjust the paste at the right consistency using the cooking liquid.
  • Completely cover the rolls with refried beans, spread shredded vegan cheese and nutritional yeast on top. Bring to the pre heated oven for about 15 minutes. And it’s done!

I think this recipe is so easy and simple to make for the amount of pleasure that brings while eating it. It is rich, creamy, flavorful and filling, that makes people happy. I’ve seen happen before!
