Sometimes is better to flow with a craving rather than try to stop it or just ignore it. For me the second option leads to a free fall on any kind of trashy food I could find. And as usual, many of these recipes are fueled by cravings, and this one is not the exception.
Yesterday was chocolate, but instead of running to get some Oreos, I tried to manage it with a little bit of creativity using ingredients available on my pantry. And that’s how this classic “chocolate chia pudding” ended on a layered dessert, which satisfied my chocolate needed soul.
Many would say: But this one is not really a “healthy” choice, and indeed a banana by itself would be by far the best for my body, but sometimes a banana needs some “glamour” before gets eated.
Here is how I made this simple recipe idea, which only tooks me 3 steps and half an hour to be ready:
Chocolate & Bananas Layers Dessert
Ingredients:
1 cup non dairy milk
5 Tsp chia seeds
3 Tbsp cacao powder
4 Tbsp maple syrup or agave
2 or 3 bananas, sliced.
8 Tbsp Peanut butter
4 Tbsp coconut whipped cream
Steps:
- Mix milk, cacao powder and syrup until smooth and no lumps. Warm the mixture in the stove or microwave for a few minutes (do not boil). Add chia seeds and let rest in the fridge for about half an hour.
- Chop fine banana slices, and reserve.
- To assemble pour a little bit of chocolate mixture in the bottom, add good layer of banana slices, a portion of peanut butter (about 2 tbsp) over them, more chocolate and top it with coconut whipped cream.
You can have it very cold in summer, letting it rest on the freezer for about 1 hr, or at room temperature if you like.
I recommend adjusting the chocolate’s sweetness to your personal taste since I do like “not so sweet” desserts. Also regarding the amounts of peanut butter and coconut cream, because if you follow a low fat diet you should lower the PB and replace the cream with plain vegan yogurt.
