Beans Salad ~ Chilean Style.

This is one the simplest salads ever, a Chilean beans salad, a very few ingredients and an amazing taste. We use to eat it mainly in summer, but it is ideal for barbecues and outdoors gathers because its simplicity and freshness.

To make it you’ll only need:

Beans Salad ~ Chilean Style

  • Servings: 4 to 6 portions

• A can of cannellini beans
• half onion
• 1/4 cup chopped cilantro
• the juice of half lemon
• one garlic clove, minced
• 1/2 tsp cumin
• 1/4 tsp black pepper
• 1/8 tsp white pepper
• 1 tsp olive oil
• salt to taste

Assembling the salad!

☆Finely chop the onion and soak it for about half an hour. After that time, rinse it and squeeze it with your hands to get all those strong liquids off. Add it to a salad bowl.
☆Rinse and drain your beans, then add them to the bowl.
☆Add the rest of the ingredients, and mix everything together very well.
You can add a little.bit of chili flakes if you want.
☆ Let it rest for about 5 minutes before serve.

This salad is ideal to have over a lettuce bed, or along with some rice, hamburgers, in a barbecue, potatoes, etc. An amazing summer option since is very fresh and crispy because the onions, which after being rinsed and squeezed do not left any strong after taste.
