Vegan crepes

Crepes are very popular in the world, everybody knows it from the French cuisine. They could be filled with an infinity sort of ingredients.

They are made from eggs, milk and flour, and they can be veganized using bananas and ground flax seed for a sweet version.


In Chile we use to eat them filled with preserves and “manjar” which is a sauce  made from milk and sugar. In other places the manjar sauce is called “dulce de leche”. I’m working in a vegan version of manjar. Just wait for it 😉

Ingredients (12 crepes):

2 small bananas

1 cup of flour

1 tbsp of ground flax seeds

3 tbsp of water

1 3/4 cup plant based milk

Preserves of your choice as filling, it can be maple syrup and fruits, peanut butter or if you wanna go real Chilean style you should try making the “manjar” recipe in advance, (coming soon).


1. Mix 3 tbsp of water with the ground flax seed and set aside

2. In a blender put the bananas and the milk to mix to a medium speed, and while the machine is working start adding first the flax seeds mixture, and then the flour in small amounts, the idea is make a really smooth mixture.

3. Put a non stick skillet to heat in high, it is necessary that the skillet is very hot, but not at the point to smoke, it should takes no more than 2 minutes to get ready in high heat, after that point lower the temperature to medium high.

4. Once the skillet is ready start adding mixture:  I add a 1/3 of a cup each time, in the center and with a slow movement make the liquid expand in a circular form, the thickness should be no more than a 1/2 cm. The amount of mixture will depends of how large in diameter do you want the crepes. A 1/3 of cup makes a crepes of 8 cm. approx.

5. When the dough looks dry and bubbly , you should be able to flip it with a spatula, sometimes the first one always comes ruin in this process, don’t be discourage!

keep trying the second one will be perfect. If the crepes get stuck try using a drops of vegetable oil before pour the mixture.


As mentioned, the fillings are infinite, you can use fresh fruits and some sauces, but you also can create your own ways to eat this delicious and healthy crepes, using not only preserves and syrups but using chocolate bits, dry fruits, dates jams, nuts, etc.
