Vegan Chilean Sandwich: “Chacarero”

This is the “Chacarero”, a sort of a king among the sandwiches in Chile. I could say is one of the top 3 favorites in the country, and the reasons are evident: Is a big, crunchy and delicious bun packed with beef , tomatoes, green beans, mayonnaise and avocado. Traditionally has fresh chili finely cut in slices.

And obviously I has to make my vegan version of it, which is not very complicated if you use a store bough vegan meat. But in the case you want to make your own seitan to make this sandwich, check this recipe.

Chacarero Sandwich

Ingredients:

2 Buns of your choice

1.5 Cup of vegetable beef of your choice

1/2 Cup fresh green beans cut as Juliane

1 Small tomato in slices

1 Smashed avocado

1 Garlic clove, minced

2 Tbsp vegan mayonnaise

Salt & Pepper to taste

Assembly:

  • Start prepping your green beans, rinse and cut them in Juliane, you can use a tool to cut them or try to finely chop them diagonally. Cook them in 2 to 3 cups of water at high heat, for 5 minutes after it starts boiling, or until they gets tender. Drain and place them in a bowl where you can season them with a splash of olive oil and salt to taste. Set aside.
  • In a skillet a medium high heat, sautee your vegan beef with one minced fresh garlic, olive oil, salt and black pepper for about 2 minutes. You can use any brand of your choice, it is important to choose one with thin slices. Also you can use your own home made seitan, like this.
  • To assemble just slice and warm your bread, spread vegan mayonnaise on it, and place the vegan beef, then tomatoes and then the green beans. Top it with a generous amount of smash avocado.

This sandwich is amazing, even if you are not a fan of green beans, juts give it a try and I will promise, you’ll start to love those fresh beans! They are a perfect match to avocado and tomatoes, very fresh, crispy and savory. Not even mentioning how delicious are those vegetables goes with the smoky and garlicky beef, all between a warm and crusty bun. It’s just glorious.

It is ideal as a very indulgent snack, or even to have it as a meal, all will depends on how big you make your sandwich. Hope you’ll give it a try, I guarantee, you are going to love it!
